Let’s begin with the essential ingredients you will require. The most important ingredient is undoubtedly Gosattva A2 cow milk, which should be 1 to 2 liters depending on how much cottage cheese you want to create. You will need white vinegar or cider vinegar, and if neither is available, 4-5 lemons will suffice. (This is where the secret ingredient comes in.) A cheesecloth to drain the excess water and any shape-giving bowl is also required.
Begin by putting the entire gallon of milk into a big container. The container should be greater than the milk level so that the milk does not spill out when we heat and boil it. Start heating the milk right now. You need to bring the milk to a boil, but this should be done slowly. To avoid scorching of milk at the bottom of the container, the heat should be set to low and we will constantly stir the milk with a spoon or spatula.
Add some vinegar or our secret ingredient once the milk has reached a boil. Sir it for 10 minutes and then leave it alone for another 10 minutes to settle it down. You will observe that our Gosattva A2 cow milk has separated into two parts, a white solid component, and a yellowish liquid, commonly known as whey when it has settled. Then, using the cheesecloth, add a bit of salt to the container and pour it into the shape-giving container. Now let it settle down and take on the shape of the container on its own.
After an hour, you’ll return to a freshly created cottage cheese. After an hour, have a look at how cottage cheese has taken shape. Now all you have to do is pat the cheeseball and remove the cheesecloth. It is completely functional. If you don’t want to use it right away, you can wrap it in plastic and store it in the refrigerator. Do not discard the whey because it is also highly nutritious. We can collect it and store it in the refrigerator for later use in the kitchen. It
can be used to make dal, roti, and even rice. It adds a lovely sweet flavor to the dish.
There are a few inventive methods to spice it up even further. While it’s settling down, we can add oregano and chili flakes. This can instantly give it an Italian flavor. Then, with a variety of seasonings, our cottage cheese can be used in several Italian salads.
